The Cathedral de Santiago at dusk. He belongs to the generation of Galician actors who are capable of playing totally unexpected roles and manage to make the rest of us believe them, and in regard to interpre-tation, the slogan Galicia calidade (Galicia Quality) could never be truer. Tamar Novas (Santiago de Compostela, 1986) behaves like a Galician, even though he has lived for years in Madrid. In fact, he can’t imagine life without travelling to the city of the Apostle to enjoy being with his family, his lifelong friends and the flavours that take him back to his childhood. The actor in The Sea Inside, Broken Embraces and The Mess You Leave Behind affirms that respect to tables and tablecloths, when he’s away from home he misses ‘Octopus á feira, ao caldeiro meat and eating surrounded by stone in the old quarter, without forgetting the seafood cannelloni my mother makes for me!’ The actor’s work schedule is full: besides the release of El juego de las llaves (13 April) is the filming of the series Los pacientes del doctor García (Dr García’s Patients) (Netflix) and the film O corpo aberto (The Open Body) that, incidental-ly, took him back home as it was filmed in Galicia, where of course he could enjoy the wonderful gastronomy. ‘It’s impos-sible to explain what “eating well” means in Galicia. You need to taste the food. It is best described by a person’s expression after they have eaten it for the first time. Not only is there good food in Santiago, you need to consider the friendly peo-ple, the atmosphere and the importance of the ritual when it comes to sharing a table’. And he gives us a tip: non deixedes a vergoña do galego, don’t leave the last mouthful on your plate just because you’re too embarrassed to eat it.
